Grain-Free Banana Bread Cookie Skillet
Two of the best baked goods in one, warm cast-iron skillet! This eight-ingredient treat is free of more allergens than there is room to list, but dairy-free + vegan are no exceptions! Each moist, chocolate-filled bite is full of the smooth, banana flavors. If not simply with the biggest spoon around, serve with cool coconut whip, (dairy-free) ice cream, or unsweetened yogurt. This kid-friendly treat is definitely something that will be hard to share and even harder to make into a leftover.
Ingredients:
2 (flax) eggs
2 ripe bananas, nearly perished
1/4 cup almond butter
1/4 cup tahini
1/4 cup maple syrup
1 cup almond flour
1 tsp cinnamon
1/2+ cup chocolate chips
Directions:
Preheat the oven to 350 degrees and lightly coat your 8-inch cast-iron with your ghee or butter of choice (I used this!).
Prepare the flax eggs, if using, by combining 2 tbsp of ground flax seeds and 5 tbsp of warm water. Set aside, until a gelatinous consistency is reached.
In a medium-sized bowl, mash the bananas until smooth.
Pour in the eggs, once thickened, almond butter + tahini, and maple syrup.
Incrementally stir in the almond flour and cinnamon, until everything is well-combined.
Fold in the chocolate chips, then transfer to your prepared skillet.
Bake for just 28-30 minutes, then allow at least five for it to cool.
Grab a spoon, or a few, then enjoy!
Store leftovers, if any, in an airtight container, or the cast-iron covered with foil, in the fridge for up to two weeks.
Notes:
It is totally fine to use any amount of nut/seed butter, so long as it adds up to 1/2 cup total! This could even mean only using almond butter or tahini, even cashew or peanut butter would be absolutely delicious!
To double the recipe (which I highly recommend!), simply follow the same directions, though doubling all of the ingredients, and transfer to batter into a 13-inch cast-iron instead! The oven time may very, so I recommend sticking and knife in the center until it comes out clean, to see when the baking is complete.
If you are really not up for doing an extra dish, you could carefully mix everything in the cast-iron skillet, still in the order listed. Fair warning: it can easily spill out the sides, proceed with caution!
