Microwave Cinnamon Roll Mug Cake

This dreamy cinnamon roll is done in minutes and fills the house with the coziest smells of sweet cinnamon! So perfectly warmed, and made in just one mug or ramekin. With just eight, gluten + dairy-free ingredients, this makes for a delicious, extra-easy dessert! The texture is cakey and oh so fluffy, so good luck with sharing. Might as well grab all the microwaveable mugs you’ve got, this won’t last long!

Ingredients:

  • 2 tbsp coconut oil

  • 2 tbsp coconut butter/manna

  • 1 egg, pasture-raised

  • 2 tbsp honey

  • 1/2 tsp vanilla extract

  • 1/4 cup almond flour

  • 1 tbsp coconut flour

  • 1/2 tsp cinnamon, plus more for the top

Directions:

  1. In a microwave safe mug or ramekin, add in the coconut oil and coconut butter.

  2. Melt in the microwave for just 30-40 seconds, or until fully melted.

  3. Whisk in the egg, then stir in the honey and vanilla as well.

  4. Gradually add the almond + coconut flours, along with the cinnamon, and stir until everything is well-incorporated.

  5. Heat in the microwave for just one minute, and up to 15 additional seconds.

  6. Drizzle with your nut butter of choice, and sprinkle on extra cinnamon.

  7. Enjoy!
