Peanut Butter Banana Breakfast Balls
One of my FAQs sent to my DMs on Instagram is, “Do you have any energy/protein ball recipes?” That I do! It’s clear that we all love them for the taste, no-bake ease, and endless combinations. These also carry the weight of satiating protein, disguised by hearty oats and creamy peanut butter. Sweetened only with a spotty banana and splash of date syrup, they’re also added-sugar-free. Sure to fuel you with nourishment as a snack or dessert to cap off your meal with extra protein to keep full!
Ingredients:
1 ripe banana
1 cup (certified gluten-free) oats
1/2 cup unsweetened, creamy peanut butter
3-4 tbsp date syrup
1/4 cup coconut flour
a few dashes of cinnamon
Directions:
Add all of the ingredients to a food processor.
Blend until everything is well-incorporated. The mixture should be very thick.
Dampen your hands to reduce sticking, then roll the mixture into balls.
Enjoy right away or store them in the fridge for 10-15 minutes so they can chill first!
For best results, store them in an airtight container in the fridge for up to two weeks.
