Peanut Butter Crunch Bars
Growing up, I was a sour over chocolate candy kid. However, Crunch bars were an exception to this. They have the most addictive blend of crunchy-sweetness and this peanut butter edition mimics that. With just five ingredients, you get the crunchy-creaminess and never have to turn on your oven!
Directions:
Line a baking dish with parchment paper and set aside.
In a medium-sized bowl, mix the brown rice crisps, peanut butter, and honey together. Press this mixture into the prepared dish.
Melt the chocolate and coconut oil together until smooth in the microwave in 30-second increments or a small saucepan over low heat until glossy.
Pour the melted chocolate over the brown rice crisps mixture and spread it out smoothly. Sprinkle with flakey sea salt, if desired.
Store in the freezer for about 30 minutes to allow the chocolate to harden. Pull the bars out of the pan by grabbing the parchment paper and pulling upward. Slice with a chef’s knife. Enjoy!
Store leftovers, if any, in an airtight container in the freezer for up to 2 months.
