Raw Strawb Bars
If you know me at all, you know I love having treats on hand from week to week. Although, they often don’t last for the full seven days they’re intended for. These still fit the bill for the time being and are an ideal added-sugar free snack to have anytime of day. The neutral-toned base has bits of strawberries that introduce bursts of flavor, too!
Ingredients:
1 cup (raw/sprouted) cashews
1/3 cup date sugar
1/3 cup creamy tahini
2-3 tbsp date syrup/honey (optional, for extra sweetness)
1 tsp vanilla extract
3/4 cup freeze-dried strawberries
Directions:
Submerge the cashews in a small bowl of hot water for 10-15 minutes. Drain the water right after.
Add the soaked cashews, date sugar, tahini, and vanilla to a food processor. Blend until everything is well-incorporated then pulse in the strawberries.
Press the batter into a loaf tin or freezer-safe dish lined with parchment paper. I used a smaller dish so they’d be a bit thicker, but you can make them as thick or thin as you’d like!
Store them in the freezer for 20 minutes. Slice into squares with a chef’s knife then enjoy!
Store leftovers, if any, in an airtight container in the fridge or freezer.
