Seedy Maple Tahini Balls
No-bake desserts are my ideal form of sweet treat. Life is especially tough when a craving hits or you need something quick and feel unprepared. Well, these creamy, indulgent bites of goodness only take 10-15 minutes to throw together! They require just seven fiber-filled ingredients and one blender or food processor. Make room in the fridge because, if you are anything like me, you’ll taste the batter and double the batch well before it’s all rolled up!
Ingredients:
1/2 cup tahini
3 tbsp maple syrup
1 flax egg
1 tsp vanilla extract
2/3 cup almond flour
1/4 cup pumpkin seeds
1/2 tsp cinnamon
Optional Add-ins:
1/4 cup chocolate chips
2-3 tbsp cacao nibs
2-3 tbsp chia/flax/hemp seeds
Directions:
In a blender or food processor, lightly purée all of the ingredients, until balls of dough start building up and spinning.
Fold in any last-minute add-ins for an extra crunch!
Grease an ice cream scoop or regular spoons with coconut oil, or lightly dampen them. Scoop 1-2 tbsp sized balls onto a tray, lined with parchment paper.
When all the dough is used up, transfer to the fridge for just 5-10 minutes.
Drizzle with melted chocolate, if desired and enjoy right away!
Store leftovers, if any, in the fridge for multiple weeks. However, I wish you luck in making them last!
Notes:
Feel free to use any nut or seed butter, if tahini is not your thing. Even a combination is welcome!
If desired, you can roll the scooped up dough balls in crushed add-ins of chocolate, nuts, seeds, anything!
