Vanilla Chocolate Chip Nice Cream

Homemade ice cream is something special, particularly when it’s full of wholesome ingredients but tastes like you got it from a local shop. Hence the coined name “nice cream!” This version is dairy-free and has a smooth vanilla tone with chunks of rich dark chocolate. With the addition of vanilla protein, it’s perfect as a fueling, pre or post-workout treat or simply a sweet snack!

Ingredients:

  • 3 organic bananas, frozen

  • 1/2 cup unsweetened almond milk

  • 3 tbsp ground flax seeds (optional)

  • 1 tsp vanilla extract

  • 1/2 tsp (Ceylon) cinnamon

  • 1 scoop vanilla protein powder (this is my favorite!)

  • 1/2 cup dark chocolate, chopped

Directions:

  1. In a food processor or blender, toss in all of the ingredients except for the chocolate chips. Blend until smooth.

  2. Use a spatula to scrape this into a freezer-safe dish, then fold in the chocolate chips.

  3. Move this dish to the freezer to let it harden for at least 1 hour.

  4. Add extra chocolate chips, sprinkles, or any other toppings you may be craving. Grab a spoon and enjoy as a pre or post-workout snack or nutrient-dense, decadent dessert!

Notes:

  • If the nice cream was in the freezer for longer than a few hours, it may have completely hardened, If so, I recommend making sure it’s in a microwave-safe dish, then microwaving it for 30 second increments and stirring it up between each or letting it sit out for 10-15 minutes before enjoying!
