Vegan S’mores Mug Cake

This is my kind of sweet treat pick-me-up! It is full of gooey chocolate and marshmallows, for a cozy cake, with no campfire needed. All it takes is one minute, which we can all bear to spare, for this delicious dessert. You can even pile on some cool ice cream, to go with the fluffy + steamy bites. Believe it or not, all you need is seven ingredients, one being paleo pancake mix — who’s in?!!

Ingredients:

  • 1 (flax) egg

  • 1/4 cup water

  • 1/2-1 tbsp maple syrup

  • 1/2 cup paleo pancake + waffle mix

  • 1 tbsp cacao powder

  • 1/2 tsp cinnamon (optional)

  • 2-3 large marshmallows (I used these, but these are vegan!)

  • 2+ tbsp dark chocolate chips

Directions:

  1. Prepare the flax egg, if using, by combining 1 tbsp of flax seed meal + 3 tbsp of warm water. Set the mixture aside, until a gelatinous consistency is reached.

  2. In a medium-sized, microwave-safe mug or large ramekin, combine the water and maple syrup. Stir in the flax egg, when ready.

  3. Gradually add in the cinnamon, if using, pancake + waffle mix, and cacao powder.

  4. Once everything is well-incorporated, separate the marshmallows into pieces and stir them in. Fold in the chocolate chips here too.

  5. Microwave for 30 seconds, then add extra marshmallow pieces + chocolate on top. Heat for a final 30 seconds.

  6. Top with coconut whip, flakey sea salt, nut butter, or even ice cream, if desired.

  7. Enjoy right away!

Notes:

  • I have not tested with other pancake + waffle mixes, so please let me know if you do! It should be a 1:1 ratio.

  • I do not recommend making this, then storing it in the fridge for multiple hours. It will likely become soggy, but you may be able to revive the mug cake by reheating it in increments of 10-15 seconds. Although, I can’t imagine not eating it all right away—that’s self control I may never obtain!
