Buffalo Chicken Nuggets
The perfect snack, kid-friendly meal, and game day appetizer has arrived! Each nugget’s spicy taste goes so indescribably well with their crispy, homemade breading. Serve with some of my chipotle ranch (see notes there), and your mouths will be on fire! These are so easy to make, and only take about 30 minutes. Move over Chick-Fil-a nuggets, and make room on the table for this homemade, flavorful food!
Ingredients:
3 pounds chicken, tenderized and cubed
1 egg, pasture raised
2 tbsp hot sauce
4 cups crackers
1 tbsp of each: black pepper, freshly ground + garlic powder
1 tsp of each: cayenne pepper, cumin, curry powder, paprika
1/2 tsp turmeric
avocado oil, for cooking
Directions:
Prepare the chicken, then whisk the egg and hot sauce together, in a small bowl.
In a food processor, or blender, mix the crackers and all seasonings, until a breadcrumb-like consistency is reached. Transfer to a separate, small bowl.
Dip a piece of chicken into the egg mixture, let the excess drip off, then immediately coat in the homemade, spicy breadcrumbs.
As you repeat the process with each individual piece, transfer to a medium-large pan, on low heat.
Once the pan is full, cover for 2-3 minutes, or until cooked on one side, over medium heat.
Flip each nugget, then cover again, until completely cooked.
Repeat until all the nuggets have been made.

Notes:
These can also be cooked in the air fryer! Simply line a pan (for half the batch) or both of them and use the “Air Fry” setting. Cook on 400 degrees for just 5 minutes! Feel free to flip them halfway, but the constantly-circulating air + heat makes this not required.
