Tangy Brussels Slaw

This refreshing, colorful mix of vegetables is the perfect topping or side to any dish! Even a small scoop adds a tart, summery taste to juicy burgers, crispy tacos, savory toasts, you name it. Who knew just ten ingredients could come together to make something so easy and versatile. Simply squeeze five to ten minutes out of your day to bring this crowd-pleasing bowl to the table. I guarantee people will be ask for seconds, maybe even thirds!

Ingredients:

  • 2 cups red cabbage, shredded

  • 1.5 cups brussels sprouts, shaved

  • 1 cup carrots, shredded

  • 1/2 cup fennel, shredded

  • 1/4 cup cilantro

  • 3 tbsp EVOO

  • 3 tbsp lemon juice, freshly squeezed

  • 2 tbsp dijon/spicy brown mustard

  • 1 tbsp black pepper, freshly ground

  • 1 tsp Himalayan pink salt

Directions:

  1. In a medium-large bowl, combine the prepared red cabbage, brussels, carrots, fennel, and cilantro.

  2. Stir in the EVOO, lemon juice, mustard, pepper, and salt, until everything is coated well.

  3. Enjoy right away, on tacos, a burger, or to the side of any of your favorite dishes!

  4. Store leftovers, if any, in an airtight container in the fridge.

Notes:

  • Freely adjust the final five mix-in amounts, to taste!
