Garlic Parmesan Zucchini Coins
Easy, healthy, and family-friendly! These zucchini coins have all you need with the dairy you don’t. They’re lightly crisped on their golden-brown edges and soft in the heart of each medallion. They come together in less than half an hour, making these cute coins the perfect last-minute addition to your meal or game day appetizers selection!
Ingredients:
1 cup zucchini, sliced into medallions
3 tbsp avocado oil
2 tbsp nutritional yeast
1 tsp sea salt
1/2 tsp garlic powder
Directions:
Preheat the oven to 450°F and line a baking sheet with parchment paper.
Spread the zucchini coins across the prepared baking sheet, leaving a bit of space between each.
In a small bowl or container, mix the remaining ingredients together well.
Use a basting brush or spatula to evenly spread about half of the mixture onto the zucchini coins. Flip each of the coins then repeat.
Transfer the pan to the oven then let the zucchini bake for about 22 minutes. Flip them all halfway through.
Serve immediately and enjoy!
