Shredded Cabbage Slaw (Mayo-Free!)

Calling all mayo haters! This slaw is for YOU. With just six ingredients, you can create a staple in your diet, full of fiber, polyphenols, and flavor. There’s tang and zest and crunch in every bite. Serve it up on a juicy burger, sandwich, salad, or on the side of a grilled dinner!

Ingredients:

  • 2 cups red cabbage, shredded

  • 3 tbsp scallions, diced

  • Dressing:

  • 3 tbsp extra-virgin olive oil

  • 2 tbsp spicy brown mustard

  • 2 cloves garlic, minced

  • juice of one lime

Directions:

  1. Start by making the dressing by whisking all four ingredients together until well-incorporated.

  2. Pour this over the shredded cabbage and mix well here. Garnish with the scallions.

  3. Enjoy! Store leftovers, if any, in an airtight container in the fridge for up to about a week for best results.
