Greek Lemon Feta Fries
One thing about me is that I love Greek food! It is invariably so flavorful and fresh in the best of ways. Greece is also the country I am most eager to visit, hopefully next summer! I just know I would thrive there as I could literally live off of dishes like these. This sheet pan of fries is a feel-good upgrade from drive-thru line pick-me-ups and still deliciously family-friendly (that is, if you’re willing to share)!
Ingredients:
4 yellow potatoes
1/4 cup avocado oil
2 tbsp fresh thyme leaves
1 tsp oregano
1 tsp sea salt
1/2 tsp garlic powder
1/2 tsp pepper
juice of a lemon, halved
greek feta, for garnish (I get mine from Trader Joe’s weekly!)
parsley, for garnish
Directions:
Preheat the oven to 400°F and line a baking sheet with parchment paper.
Slice the potatoes thinly vertically then into fries-sized strips.
Toss the sliced potatoes, avocado oil, herbs, salt, garlic, pepper and half of the lemon’s juice into a mixing bowl. Stir everything together until it is all well-incorporated. Spread the potatoes across the prepared pan. The more room you leave between each one, the crisper they will become.
Cook in the oven for 40 minutes and flip each one halfway through.
Garnish with feta crumbles and chopped parsley. Enjoy!
