Peach Cucumber Salsa

Grab your chef’s knife so you can swiftly mince, chop and mix these fresh ingredients together. In under 15 minutes, you can have this vibrant, sweet and spicy salsa at-the-ready. Serve over grilled meat, tacos, nourish bowls, the list goes on and on. This salsa was inspired toward the end of summer in the spirit of holding onto all the warmth and in-season produce for as long as I can!

Ingredients:

  • 1 peach

  • 1 persian cucumber

  • 1 jalapeño

  • 1/4 cup red onion

  • 1/4 cup yellow bell pepper

  • 3 tbsp fresh cilantro

  • 2 tbsp peach juice (optional)

  • 1 tsp fresh ginger, minced

  • 1/2 tsp sea salt

  • juice of one lime

Directions:

  1. Use a chef’s knife to dice the peach, cucumber, onion and peppers and finely chop the cilantro.

  2. Mix all of the ingredients together and enjoy as desired!

  3. Store leftovers, if any, in an airtight container in the fridge for up to 3 weeks for best results.
