Island Spice Plantain Chips

Welcome to the tropics, minus the packing and time it takes to travel there! These quickly become oh so crispy + crunchy. Their flavorful, unique kick pairs indescribably well with a creamy, buffalo ranch. Perfect for a fun, few-ingredient snack, appetizer, or side dish. Make five minutes to prepare, and you’re ready to go just 20 minutes later!

Ingredients:

  • 1 plantain, ripe

  • 1/2 tbsp pepper, freshly ground

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1/2 tsp nutmeg

  • avocado oil, for coating

  • buffalo ranch, for dipping (optional)

Directions:

  • Preheat the oven to 400 degrees and line a baking sheet with parchment paper.

  • Slice the plantain into about 1/2 inch slices and transfer to the prepared pan as you go.

  • Lightly drizzle or spray each piece with avocado oil.

  • Evenly distribute each spice, one by one, on both sides of the plantain pieces.

  • Cook for 20-22 minutes or until a desired crispness is reached.

  • Let cool for a few minutes then enjoy with buffalo ranch or eat plain!
