Bacon-Wrapped Figs with Goat Cheese
Have you read the title yet? Now I bet you all have, meaning you know all three ingredients needed. This a simplistic snack or appetizer, which will transport you and your guests to a fancy restaurant, but at a much cheaper cost! The slight tang and creaminess of gooey goat cheese compliments the sweet, subtle figs. Once the lightly salted bacon is wrapped cozily around it all, there’s no chance in anyone just having one, even two, at a time. Even the warm, fresh smell of all the flavors alone is something I guarantee you will become addicted to, and I can confidently say that makes two of us!
Ingredients:
10-12 figs
1/3 cup goat cheese (I used this honey goat cheese!)
2-3 slices of sugar-free, organic bacon
Directions:
Preheat the oven to 400 degrees and grease an 8x8 cast-iron skillet with coconut oil or line a baking sheet with parchment paper.
While the oven warms up, slice each fig in half.
Place the figs on the prepared skillet or pan and place at least 1 tsp of goat cheese on each. Lightly pull the figs edges apart and place the goat cheese inside, if preferred.
Slice the bacon slices into two-three, thin strips, vertically and do the same horizontally.
Wrap the bacon strips around each prepared fig. It’s okay if it’s just laid on top and does not make it around.
Cook on the middle rack for 22-24 minutes, or until the bacon is fully cooked.
Let cool for at least 5 minutes and enjoy!
Store leftovers, if any, in the fridge for up to one week. Should be no problem, trust me!
