Marinated White Beans

You guys… it feels like I’ve cracked some kind of code! These white beans get to bathe in silky olive oil alongside juicy tomatoes to create the best burst of flavors. My favorite way to serve these is on a crisp, thick slice of sourdough toast with leafy greens on top. Second favorite: dishing them straight out of the jar with a spoon!

Ingredients:

  • 1 can white beans, drained + rinsed

  • 3 tbsp cherry tomatoes, halved

  • 2 cloves garlic, minced

  • 1 red chili, minced (optional)

  • fresh juice of 1/2 a lime

  • 1/2 tbsp fresh dill

  • 1/2 tsp pepper

  • 1/2 tsp sea salt

  • 1/3 cup extra-virgin olive oil

Directions:

  1. To your jar of choice, add the white beans followed by all but the extra-virgin olive oil remaining.

  2. Stir as best as you can without mashing the beans. Pour the evoo over the top of everything so the beans are submerged in the oil.

  3. Seal the jar’s lid then store in the fridge to chill for at least 30 minutes before enjoying as desired!
