Traditional Greek Salad

Holding onto the warm-weather months as long as I can. This Greek salad is so light and refreshing. A perfect pairing for your protein of choice and some rice or crispy potatoes. Such a vibrant staple for you to build any meal off of knowing you’ve tossed so much veg onto your plate!

Ingredients:

  • 1 persian cucumber, diced

  • 1/2 cup cherry tomatoes, quartered

  • 1/2 cup kalamata and/or green olives, pitted and quartered

  • 1/4 cup greek feta crumbles

  • 2 tbsp extra-virgin olive oil

  • 2 tbsp apple cider or fresh lemon juice

  • 1 tbsp fresh dill

  • 1/2 tsp pepper

  • 1/4 tsp sea salt

Directions:

  1. In a medium-small bowl, toss all but the feta together.

  2. Fold in the feta and enjoy right away!

  3. Store leftovers, if any, in an airtight container in the fridge for up to 10 days for best results.
