Paleo Granola

Even smoothies, waffles, and yogurt need crunchy toppings to seal the deal. Two of my favorites: chopped nuts and cacao nibs! I brought the two together to create this delicious, paleo addition to our mornings. It’s packed with fiber and omega-3 fats to keep you feeling full and extra energized. The ingredients are also adjustable, perfect for you and your family to expand your intake of nuts and seeds. Eating this plain is definitely an option, and it’s ready in under 30 minutes!

Ingredients:

  • 1.5 cups walnuts

  • 1 cup almonds

  • 1/2 cup pecans

  • 1/2 cup coconut, desiccated + unsweetened

  • 1/4 cup flax seeds

  • 1/4 cup cacao nibs

  • 1/4 cup coconut oil, melted

  • 2 tbsp honey

  • 1 tsp cinnamon

  • 1/4-1/2 tsp of each: allspice, ginger, nutmeg

Directions:

  1. Preheat the oven to 325 degrees and line a baking sheet with parchment paper.

  2. Place all nuts and seeds in a food processor and lightly pulse, just enough to chop everything up.

  3. Melt the coconut oil and pour it into a large bowl.

  4. Stir the honey and spices in.

  5. Add the nuts and seeds and stir until everything coated well.

  6. Pour in the cacao nibs and stir once more.

  7. Transfer to prepared baking sheet, keeping everything close together.

  8. Bake for 10-12 minutes and let cool for 5 minutes.

  9. Place in the freezer for 12-15 minutes, until fully hardened and chilled

  10. Enjoy the giant clusters and use as crunchy topping, or eat plain!

  11. Store leftovers in the fridge.

Notes:

  • Any combination of nuts is totally welcomed here, just make sure you use 3 cups total.

  • Chia or hemp seeds can go in place of the flax seeds.

  • Maple syrup can be substituted for honey.

  • Once removed from the oven, do not touch it, until after freezing. This is crucial for achieving those giant clusters!
