Breakfast Pizza Toast
Wow, this takes me back! This meal screams the perfect morning in with fuel for the day ahead. There’s salty pepperonis, gooey cheese, and a (runny) egg in the center. Such savory flavors blend together so well with a hint of resemblance to pizza bagels for those who also grew up eating them as an afternoon bite!
Directions:
Toast the sourdough slices. Use a spoon to then press a circular indent into the center of each slice. Fill each indent by cracking an egg inside.
On one slice, surround the egg with half of the tomato sauce. Add half of the pepperonis on top, along with the cheese and pepper. Repeat with the other slice.
Move to a skillet and cook on low-medium heat until the egg is just white over the top. Cover for 2-3 minutes for a less runny egg and add oil to the skillet if needed.
Garnish with salt, cilantro, and chili oil. Enjoy right away!
