Double Dark Chocolate Raspberry Pancakes

This lush pancake stack has such a delicious, berry-chocolate flavor! Each bite is vegan and added-sugar free, and made of just eight staple ingredients. Perfect for an at-home brunch, early breakfast, or even midday dessert. With smooth, juicy raspberries melting by means of the gooey chocolate chunks, you won’t be able to set your fork down!

Ingredients:

  • 1/2 cup (paleo) pancake mix

  • 1-2 tbsp ground flax seeds

  • 1 tbsp cacao powder

  • 1 tsp cinnamon

  • 1/2 cup + 2 tbsp (dairy-free) milk, unsweetened

  • 1 tsp vanilla extract

  • 1/3+ cup chocolate chips/chunks

  • 1/4 cup organic raspberries, mashed

Directions:

  1. Lightly grease a skillet with either coconut oil or (vanilla bean) ghee.

  2. In a medium-sized bowl, combine the pancake mix, flax seeds, cacao powder, and cinnamon well.

  3. Pour in the milk and vanilla, then stir until smooth.

  4. Fold in the chocolate chips, then the fresh raspberries.

  5. Over low-medium heat, scoop about 1/4 cup batter on the prepared skillet into about five pancakes.

  6. Once each circle of batter starts bubbling on the top, flip it over for a final minute or two.

  7. Drizzle creamy nut butter and manuka honey on top along with sprinkles of crunchy cacao nibs, or whatever toppings you’re craving!

  8. Grab a fork and enjoy!

Notes:

  • Though I have not tested it, you should be able to use any pancake mix you chose! Simply prepare the batter as the packaging says/however you would normally. After this, add in the ground flax, cacao powder, cinnamon, milk and vanilla, then pick up from step four!
