Waffle Egg-which
Whether brunch, breakfast, or lunch, this needs a place on the table! It combines two very popular, family-favorite foods- waffles and omelettes. Make them however you want, spicy, plain, garlic + herb, you name it! It takes a mere, spare ten minutes to get the day going, and have your body properly fueled. Enjoy each savory, crispy waffle and fluffy egg bite!
Ingredients:
2 waffles (I used these paleo ones.)
1 egg, pasture raised
1 tbsp avocado oil, for cooking
2 cups spinach
2 tbsp red onions
2 tbsp sun-dried tomatoes
1 tsp garlic, minced
1 tsp black pepper, freshly ground
1/2 tsp of each: cayenne pepper, paprika, rosemary
1/4 tsp turmeric
1/2 avocado, medium
hot sauce, for drizzling
Directions:
While the waffles of choice are heating, begin sautéeing the spinach, red onions, tomatoes and garlic, in the avocado oil.
Once the spinach is wilted and the onions start to brown, stir in the spices and let cook, for an additional minute.
Crack the egg on top of the mixture, and move it with a spatula, so it’s engulfing everything.
Flip, once fully cooked on one side.
Once cooked, place on one waffle, with some avocado and hot sauce (if you’re like me), then sandwich it all, with the second waffle.

Notes:
Can use any fillings, for the omelette, these are simply what I was craving.
For a less-runny egg, stab the egg’s yolk, with the spatula, after cracking it over the mixture. Right after, stir around, still engulfing everything.
