Healthier Hamburger Helper

Taking it back to my childhood with this gem. It is a one-pan, family-friendly meal that normally comes in a good, classic box at the store. This version can easily be amped up with sneaky, sautéed spinach or even juicy sundried tomatoes. The gooey cheeses are so mouthwateringly delicious, with every warm bite. Truly can’t get enough of this comfort, now feel-good, food!

Ingredients:

  • 1 pound organic beef, grass fed + finished

  • 1/2 cup red onions, diced or sliced

  • 2 cloves garlic, finely minced

  • 1 cup goat cheese

  • 1/2 tbsp fresh pepper

  • 1 tsp cilantro

  • 1 tsp turmeric

  • 1/4 cup unsweetened milk

  • 1.5 cups pasta (I used this!)

Directions:

  1. In a medium-large pan, place the beef inside, over low-medium heat.

  2. If not already done, chop up the meat, then allow it to sauté. Leave it there for about 4 minutes, or until almost all the pink is gone.

  3. Add in the red onions and garlic, then sauté everything until the beef is fully cooked.

  4. Stir in all the goat cheese and spices, then let cook for about 1 minute.

  5. Pour in the milk, then cover the mixture and let it simmer for 3-4 minutes.

  6. As it finally finishes cooking, prepare your pasta of choice.

  7. Once everything is done, mix the drained pasta in well, and admire the ultra gooey cheese!

  8. Enjoy!

  9. Store leftovers, if any, in an airtight container in the fridge for up to one week.

Notes:

  • Use any cheese you would like, goat cheese is simply my favorite!
