Chicken Noodle Soup

This classic soup is the meal of my inner kid’s dreams! Serving up a fresh bowl of this could not be more comforting, considering there are warm veggies and noodles involved. The fillings really soak in all of the bone broth’s flavor, and it’s nutrient-dense composition doesn’t hurt to have, as it’s partner. I guarantee this is perfect as a quick, family-sized leftover as well, although I wouldn’t know from experience just yet! Enjoy the taste of fresh herbs here too, which makes this dish extra bold, and everyone look forward to the next bite. We all deserve for food to taste this way!

Ingredients:

  • 1 pound organic chicken

  • 1/2 cup carrots, sliced into circles

  • 1/2 cup celery, diced

  • 1/2 cup red/white onions, diced

  • 1 tbsp avocado oil

  • 2 cups organic bone broth

  • 1/2 cup organic noodles of choice (I used these!)

  • 1/2 tbsp of each: fresh pepper, parsley, rosemary, thyme

  • 1 tsp pink salt

Directions:

  1. Prepare the chicken by tenderizing it first, if desired. Either cube or shred the chicken, totally your preference.

  2. Prepare the veggies as recommend, or possibly shave/slice them differently.

  3. In a medium-large skillet, turn the burner up to low-medium heat, then drizzle the avocado oil on the skillet.

  4. Once warm, transfer the raw chicken and veggies into the pan. Sauté these ingredients until the chicken is almost fully free of pink and the onions begin browning.

  5. Pour in the bone broth, then add the pepper, fresh herbs, and pink salt.

  6. Bring to a boil, then add the noodles. Reduce the heat to low, if not already done, and allow to simmer until the noodles are fully cooked.

  7. Transfer to bowls, or use this as a single-serve meal (no judgment here). Enjoy!

  8. Store leftovers, if any, in the fridge for up to two weeks.

Notes:

  • This recipe may suit just one person. If cooking for a family, I recommend doubling, or even tripling, this recipe. You can also add a slice of bread, a side salad, or simply have leftovers!

  • You may substitute chicken stock for the bone broth.

  • Feel free to adjust the amount of herbs and spices to taste, per usual.
