One Pan Lasagna
This is the feel-good, family friendly meal we all never knew we needed! This is made with minimal dishes, a juicy, homemade tomato sauce, and sneaky greens. All loaded with delicious flavors of aromatic garlic, and the comfort of warm, melted cheese. So ideal for meal prepping, an at-home dinner, or a night when you want to let the oven do most of the work!
Directions:
Preheat the oven to 350°F and lightly grease a medium-sized baking dish in avocado oil.
In a separate bowl, combine all of the tomato sauce’s ingredients. For a chunkier sauce, leave as is, but for a smoother one, mash the tomato chunks with a fork or use a hand mixer to create your desired consistency. Also finely chop the ground turkey, if using.
Place a layer of pasta noodles down so it covers the bottom of the pan.
Cover the layer of pasta with about 1/3 of the tomato sauce and ground turkey. Add on roughly 1/4 cup of the mozzarella. Top this off with another layer of pasta noodles.
Repeat steps three and four two more times, but skip the very last layer of pasta. In other words, don’t add noodles at the very top. Add the remainder of all the rest of the ingredients when you get to the top, especially the cheese.
Transfer the pan to the oven and let cook for 55 minutes to an hour. Sprinkle on even more cheese, and let it broil for 2-3 minutes for an added, golden-brown look and comforting flavor!
Allow the lasagna to cool for 5-10 minutes, top with fresh herbs, slice, and enjoy!
Store leftovers, if any, in an airtight container for up to 10 days.
