Sundried Tomato, Goat Cheese Sliders
This family-friendly dish is stuffed with tangy, creamy crumbles of goat cheese and juicy, sundried tomatoes. The cheese melts away with each warm bite, which have hints of fresh cilantro. Perfect for a summer brunch you waited to make something for until the day of (I’ve been guilty of this before!), since this takes under 20 minutes to prepare. Enjoy with all sorts of toppings and sides, such as leafy greens and drizzles of vibrant mustard. These sliders are so simple, if you’re not careful, they could easily become a staple in your home all year round!
Directions:
In a medium-sized bowl, mix everything but the goat cheese well. I use my hands, then simply wash them well after, but you can also use some spatulas!
Once everything is well-incorporated, fold in the goat cheese.
Form the mixture into 4 or 5 patties, and transfer them to a skillet over low-medium heat.
Let them cook on one side for about 6 minutes, then use a spatula to flip them over for a final 2-3 minutes.
Enjoy with greens as the “bread” (I used bok choy!), on a salad, to the side of sweet potato fries, or simply with some drizzles of your favorite condiment!
Store leftovers, if any, in an airtight container for up to about 5 days.
