Paleo Spinach Burgers with Sweet Potato Buns

No grill, no problem! These are cooked and served up stove-side, making them accessible year round. Odds are you have all 5 ingredients, plus some seasonings, in your kitchen. They’re the perfect game day, or really any day, crowd pleaser. I doubt anyone is able to take their hands off these juicy, customizable burgers. The clean ingredients will leave you feeling fresh, and have every one going back for more! Bonus: try simple sweet potato buns or a crunchy lettuce wrap, as upscale looks to any average pieces of bread.

Ingredients:

  • 2 tbsp avocado oil, for cooking

  • 1 pound ground beef, grass-fed

  • 1/2 cup spinach, finely chopped

  • 1/4 red onion, medium + diced

  • 2 tsp garlic, minced

  • 1/2 lemon, freshly squeezed (optional)

  • 1/2 tbsp black pepper, fresh ground

  • 1 tsp of each: cumin and italian seasoning

  • 1/4-1/2 tsp himalayan pink salt

  • 2 tbsp nutritional yeast (optional)

Sweet Potato Buns:

  • 1 sweet potato, extra wide

  • avocado oil, for drizzling

  • any desired seasonings, to taste (optional)

Directions:

Burgers:

  1. Chop the spinach, onions, and garlic as listed.

  2. In a bowl, combine the beef, spinach, onions, and garlic. If using, also add the lemon juice.

  3. Sprinkle all spices in, then use hands to mix, to make sure everything is incorporated well.

  4. Over medium heat, drizzle avocado oil in a medium-large pan.

  5. Form into 4-6 patties, and place each on the heated + greased pan.

  6. Cover and let cook for 5 minutes, untouched.

  7. Flip, cover, and cook for an additional 5 minutes.

  8. Serve in a lettuce wrap or sweet potato buns, along with your favorite toppings!

Buns:

  1. Preheat the oven to 425 degrees and line a baking sheet with parchment paper.

  2. Slice the sweet potato into rounds, about 1-inch thick.

  3. Place the rounds on the prepared baking sheet, then drizzle with avocado oil.

  4. If desired, sprinkle seasonings on each side.

  5. Cook for 20-25 minutes, flipping halfway through.

  6. Enjoy!

Notes:

  • Leave space between each burger, to be sure they cook thoroughly.

  • I made 4 large burgers, although you could make about 6 normal-sized.

  • Get creative with the spices, to fit your taste buds! Add a tbsp of hot sauce or cayenne pepper, for an extra kick!
