Tasty Tostadas
This quick, family-friendly meal has arrived, for anyone who enjoys a colorful meal. It’s oh so versatile, and easy to make, in under 15 minutes. Add as much spice general flavor as your taste buds crave! This leaves me feeling content, even without the traditionally “deep-fried” tortillas, and I bet you won’t miss them either. The secret to indoor, crispy, charred grill lines, is down below, along with a handful of seasoned, savory toppings I found delicious!
Ingredients:
2 cassava flour tortillas, or any other
2 cups spinach
1/4 cup cauliflower florets
1/8 cup broccolini, sliced
1/8 cup red onions, diced
1 tsp garlic, minced
1/2 cup red enchilada sauce (totally optional)
1/2 tbsp black pepper, freshly ground
1 tsp cayenne pepper
1/4 tsp turmeric
3 tbsp dairy-free sour cream
2 tbsp scallions, diced
Other Topping Ideas:
meats: organic ground beef, chicken, or shrimp
veggies: red cabbage, jalapeños, white onions
spices; chili powder, cumin, nutritional yeast, oregano, paprika
garnishes: goat cheese, cilantro
Directions:
Slice and dice veggies, then place a pan over low-medium heat.
Place all meats, if using in first, and let cook for 2-3 minutes.
Add in all vegetables, and sauté, until everything appears golden-brown, on the exterior.
Pour in the red enchilada sauce, or whatever sauce you chose to use, if any.
Stir and let everything cook down, while absorbing the sauce, for about 2-3 minutes.
Sprinkle and stir in all spices, and allow to cook for a final minute. Turn the heat off, once done, but leave the pan over the burner, to keep the food warm.
On a separate burner and open flame, place an individual tortilla over it, on top of the stove’s grid. Be sure the flame is not wider than the tortillas, and stays underneath it. Once the tortilla starts bubbling and char marks appear, flip and repeat with the other side.
Transfer all sautéed toppings to the tortillas, garnish, and enjoy!
