Quick and Crispy Chicken
Make room in the freezer, by preparing family-friendly chicken tenders from scratch! Just grab a box of your favorite, crunchy crackers, some seasonings, and organic chicken breasts. The kids will be begging for this, night after night. Simply set aside about 20 minutes, and a delicious, paleo-friendly, gluten, grain, AND dairy free meal is ready to be served!
Ingredients:
1 pound organic chicken breasts
2 cups crackers of choice
1-2 tbsp flax seeds
1/2 tbsp black pepper, fresh ground
1 tsp of each: garlic powder, oregano, and rosemary
1 egg, pasture-raised
3-4 tbsp avocado oil, for cooking
Directions;
Cut the chicken breasts into strips, then use a meat tenderizer to make the pieces the same height.
In a food processor, chop the crackers, seeds, and all seasonings, until a flour-like consistency is reached. Transfer the bread crumb mixture to a small bowl.
In a separate, small bowl, whisk the egg.
Using tongs, coat a chicken strip in the egg, and let the excess egg drip off, back into the bowl.
Fully coat each side in the bread crumb mixture.
Once everything is coated, drizzle the avocado oil in a pan, over low-medium heat.
Transfer the strips onto the pan, leaving space in between. May have to do multiple rounds.
Cook each side for 3-4 minutes, or until the breading turns golden-brown. Cover, while cooking, so the chicken cooks through fully.
