Iced Peppermint Mocha Latte

I could go for peppermint-flavored drinks any time of year! The mixture of silky-smooth coffee and milk along with rich cacao is unstoppable. Peppermint is known for diminishing headache symptoms so this drink will enhance your energy boost with the bonus of mental clarity. This five-ingredient drink is one I find oh so refreshing and delicious!

Ingredients:

  • 1/4 cup hot water

  • 1.5 tbsp instant coffee (I love any from this brand!)

  • 1 tbsp cacao powder

  • 1/2-1 tsp coconut sugar (totally optional)

  • 1/4 tsp peppermint extract

  • 3/4 cup (dairy-free) milk of choice

  • 1/4-1/2 cup ice

Directions:

  1. In a small bowl, mix the hot water and coffee until dissolved.

  2. Stir in the coconut sugar, if using, cacao powder, and peppermint, until everything is combined well.

  3. Place ice cubes into your favorite mug or glass, then pour the coffee mixture overtop.

  4. If desired, use a frother or blender for the milk to create a foamy texture.

  5. Pour the milk over the prepared coffee.

  6. Stir with a reusable straw then enjoy!
