Pumpkin Spice Latte
This drink is the perfect way to go about any fall day, but now that I’ve created a healthier version of everyone’s seasonal Starbucks order, we can enjoy it year-round! It is bound to keep you warm, and provide a cozy, fall taste in your mouth, with each sip. This takes all of five minutes to make, so I won’t blame you for adding it to your morning routine, with me. It’s dairy and sugar free, with an optional addition of honey to take this an oh so bittersweet level. Bonus: make the “creamer” in bulk, and pour into your coffee, to save cash + time at the drive thru and to keep you elevated, throughout the whole week!
Ingredients:
1 cup milk of choice
1 tbsp pumpkin pie spice (make your own here!)
1/2 cup cold brew coffee
1 tsp vanilla extract
Optional Add-ins:
1-2 tbsp honey/maple syrup
1-2 scoops collagen peptides
coconut whip, for topping
Directions:
In a small saucepan, combine the milk and pumpkin pie spice, over low-medium heat, until the mixture is slightly bubbling.
Stir in the sweetener and collagen, if using, along with the coffee and vanilla.
Bring to a boil, for 1-2 minutes, and make sure everything is mixed well.
If desired, transfer to a blender or use an immersion blender to froth the mixture.
Pour into your favorite mug, add some (optional) coconut whip, then sip away!
Notes:
Prepare the “creamer” in bulk, so you can have an even swifter morning twist to your coffee! Simply make everything as normal, but allow the mixture to cool prior to storing in an airtight container in the fridge, and pour the cold brew coffee in the following day.
This pumpkin spice latte can be made iced!
