Tahini Date Coffee Shake
In my mornings in the comfort of home, I have three drinks: my AG1, a smoothie or protein shake, and often an iced coffee or matcha. I thought, why not just combine two of my favorite morning rituals into one?! This thick coffee shake is foamy, creamy, and resembles a decadent milkshake. It’ll start your days strong or serve as the perfect pick-me-up that includes nourishing protein and a caffeine boost!
Ingredients:
1 cup coconut milk ice cubes*
1 cup cold brew coffee (make your own here!)
1 medjool date, pitted**
1 heaping tbsp tahini
1/2 tsp cinnamon
1 scoop vanilla protein
1-2 scoops collagen peptides (optional)
Directions:
Start by making the ice cubes: in an ice cube tray, fill about 6-8 molds with coconut milk. Freeze for at least 3 hours so they can harden.
Add all of the ingredients to a high-speed blender and blend until smooth. Pulse a few times at the end to get rid of any chunks that are still in tact.
Pour into your glass of choice and enjoy!
Notes:
You can substitute any milk you would like for the ice cubes.
If your date is hard, soak it in hot water for 5-10 minutes so it will blend in well.
