Buffalo Sweet Potato Hummus
This bold snack or appetizer can also be served as a topping for any savory meal, whether on crispy toast, a juicy burger, or even a salad! For someone with a high tolerance to spicy foods, this is no joke, although you can easily take it down a few notches by opting for a mild over hot buffalo sauce. It truly doesn’t get easier than this to bring some flavor to the table in less than five minutes. With subtle hints of tart lemon and cracked pepper behind each ultra smooth, creamy bite, I'll go ahead and break the news: it won’t be lasting long!
Ingredients:
1 cup chickpeas
1 cup sweet potato purée
1/2 cup buffalo sauce (I used this!)
2 tbsp fresh lemon juice
1 clove garlic, finely minced
1/2 tbsp cracked pepper
1/2 tbsp buffalo seasoning (optional)
cayenne pepper, for topping (optional)
Directions:
In a food processor, blend the chickpeas, sweet potato, buffalo sauce, and lemon juice until smooth.
Add in the spices and seasonings, then blend again, until everything is well-incorporated.
Transfer to a serving bowl, then enjoy with crunchy crackers, fresh veggies, or even as a salad or toast topping!
Store leftovers, if any, in an airtight container or jar for up to two weeks.
