Chunky Mango Salsa
This vibrant, chunky salsa is needed for any sort of spring or summer get together! Each bite is juicy and full of refreshing fruits, such as red tomatoes and bright-orange mangos. Otherwise, there are only about five ingredients, including fresh cilantro that complete the wide range of flavors here. Serve with crunchy chips, crispy fish tacos, on a thick slice of toast, or even a bed of leafy greens to amp up any average salad. All I know is, this won’t be lasting long!
Ingredients:
1.5 cups tomatoes
1 cup mango
1/3 cup red onion
1/4 cup scallions
1-2 tbsp fresh cilantro
1 tsp pepper
1 tsp Himalayan pink salt
Directions:
Dice the tomatoes and mangos into bulky pieces. Dice the red onions and scallions more finely than these.
Toss everything into a bowl, then add the cilantro, pepper, and salt.
Stir everything around and make sure it is all well-incorporated.
Grab some crunchy chips or some crispy tacos and enjoy!
Store leftovers, if any, in an airtight container for up to one week. Although, it tastes best fresh!
