Creamy Cilantro + Spinach Pesto

Looking for something to drizzle on salad or bowls, or spread onto pizza? This can truly make anything savory feel snazzier, trust me. It’s no secret cilantro and spinach are under the spotlight. However, avocado puts the word “creamy” into play, and enhances the vibrant, green color. This sauce, dressing, dip, spread, really all of the above, is customizable to fit your taste buds too. For an extra boost in flavor, try my lemon basil pesto, neither can even begin to disappoint!

Ingredients:

  • 1 large bunch cilantro

  • 1 cup spinach, packed

  • 1/2 avocado, medium

  • 1/3 cup pistachios/pine nuts

  • 1/3 cup EVOO

  • water, to thin

  • 1 tbsp black pepper, freshly ground

  • 1/2 tbsp. garlic, minced

  • 1/2 tbsp nutritional yeast (optional)

Directions:

  1. In a food processor or blender, pulse spinach, cilantro, avocado, nuts, and EVOO.

  2. Add a little bit of water, along with the hot sauce, for an extra kick, until it forms a smooth and creamy consistency.

  3. Add the minced garlic, black pepper, and any other seasonings you desire!

  4. Enjoy!

  5. Refrigerate leftovers in an air-tight container or jar for up to 1 week.

Notes

  • Add a few leaves of basil, preferably fresh, if desired.

  • For extra spice, sprinkle cayenne pepper, cumin, paprika, and hot sauce in, to taste.
