3-Ingredient, Fresh Jam

There’s nothing like fresh fruit, in the spring summer! This jam is a sweet, tart, and refreshing way to get your daily dose of fruits in. Blueberries, peaches, strawberries, or whatever else you’re craving are all warmly welcomed as well. In a rapid, merely 10 minutes, the perfect topping for toast, yogurt, or spread for a classic pb&j can be right in your fridge!

Ingredients:

  • 3 cups fruit of choice, preferably fresh

  • 2 tbsp flax/chia seeds

  • coconut oil, for greasing saucepan

Optional Add-ins:

  • 1-2 tbsp lemon juice

  • 1 tsp-1 tbsp allspice, cinnamon, ginger, or nutmeg

  • 1-2 tbsp honey/maple syrup

Directions:

  1. Lightly grease a small saucepan with coconut oil, and turn the heat to low-medium.

  2. Add (mixture of) stemless fruit.

  3. Stir often.

  4. When the fruit begins to bubble up, mash with the back of a wooden spoon, spatula, or fork.

  5. Add in any extras you want for the jam, and stir until combined well.

  6. Add the seeds, and stir again.

  7. Allow to simmer for 5 minutes, and sit over low-medium heat for another 5 minutes, until thickened.

  8. Let jam cool in a container or cute jar, in the refrigerator.

  9. Spread and store any leftovers in the fridge, for about one month!
