3-Ingredient Crunch Bark

As a kid, I was hooked on sour candy, but made exceptions for a few, consistent chocolate cravings. The classic crunch bar was heavenly in my mind, with it’s silky-smooth chocolate surrounding every side of crispness. This 2.0 copycat version uses a quarter of the ingredients in conventional crunch bars, and doesn’t require that you turn on your oven. Totally vegan and gluten-free, too! I recommend finding a good hiding spot in your freezer to store this treat because I, alone, I have managed to go through all but a few bites in a matter of merely two days— it’s that good!

Ingredients:

  • 1 cup chocolate chips/chunks

  • 1/2 tbsp coconut oil

  • 2.5 cups cereal (cheerios-shaped works best— I used this!)*

  • 3 tbsp hemp seeds (optional)

  • flakey sea salt

Directions:

  1. Melt the chocolate chips and coconut oil. If you choose to microwave the two, do so in 30-second increments, stirring between each, until the chocolate is glossy.

  2. Transfer the melted chocolate to a mixing bowl. Fold in the cereal or rice crisps until coated.

  3. Disperse the mixture onto a pan covered in parchment. Sprinkle with hemp seeds, if desired.

  4. Store in the freezer for 15-20 minutes then let thaw for 5 minutes before breaking apart and enjoying!

Notes:

  • Rice crisps would also be a great sub for the cereal, or you could do a combo!
