Chocolate-Covered Blueberry Bark

As easy as can be! This bark has everything you need for a go-to snack, and nothing you don’t! There are no added sugars, but the sweetness of fresh, juicy blueberries and rich, decadent chocolate fill in all the gaps of what you might be craving. You can even make a miniature batch of this bark to have the day-of, or prep a full pan for when the craving hits.

Ingredients:

  • 2 cups organic blueberries

  • 1 chocolate bar or 3/4 cup chocolate chips

  • 1 tsp coconut oil

  • almond/peanut butter, for drizzling

  • 3 tbsp hemp seeds (optional)

Directions:

  1. Line a baking sheet with parchment paper then spread the blueberries onto it. Use a fork to mash the berries.

  2. Add the chocolate and coconut oil to a small pan over the stove to allow the chocolate to melt. Keep the heat on low and stir frequently to keep it from burning!

  3. Drizzle the melted chocolate, then your nut butter of choice over the mashed blueberries. Sprinkle on the hemp seeds, if desired.

  4. Move the pan to the freezer for at least 30 minutes. Break it into pieces with your hands or a chef’s knife, then enjoy!

Notes:

  • I recommend letting the bark thaw out for just a few minutes before enjoying so it gains a less icy, perfect texture!

  • This can be stored just on the pan in the freezer for up to about three days, but if it lasts any longer than that, I suggest moving the remaining bark to an airtight container to prevent it from getting iced over.
