Maple Sugar Cookies

While these were made to commemorate the cooler months having come around, you can enjoy these all year long with ease! With less than ten ingredients, these dairy, gluten, and refined-sugar free cookies are baked to perfection. Their texture is so soft and fluffy, and basically pillow-like. These are easily my favorite non-chocolate cookies I’ve made to date, and I know you’ll fall in love with them, too!

Ingredients:

  • 2 pasture-raised eggs

  • 1/2 cup coconut oil, melted + cooled

  • 1/3 cup coconut sugar, plus more for sprinkling

  • 1/4 cup maple syrup

  • 1 tsp vanilla extract

  • 2.5 cups almond flour

  • 1 tsp baking soda

  • 1/2 tsp cinnamon

  • 1/2 tsp pink salt

Directions:

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.

  2. Whisk the eggs in a medium-sized bowl.

  3. Add the coconut oil, sugar, maple syrup, vanilla, and stir well.

  4. Fold in the remaining four ingredients until everything is well-incorporated.

  5. Scoop the dough onto the prepared baking sheet. Sprinkle a touch of coconut sugar onto each dollop of dough.

  6. Bake for 12 minutes, then let cool for at least 5 minutes. Enjoy! Store leftovers, if any, in an airtight container.
