Pumpkin Hummus

This is the dip of my autumn dreams! Each taste is ultra smooth and creamy with hints of warm spices tossed in. This makes for the easiest appetizer or dessert. Bring this to a friendly gathering, or simply prep this to have it ready to serve up in the comfort of your own home. Enjoy with salty crackers, with fresh fruit, on buttery toast, or by the spoonful!

Ingredients:

  • 1/3 cup pumpkin purée

  • 1 can chickpeas, drained + rinsed

  • 3-4 tbsp maple syrup

  • 2 tbsp ground flax seeds

  • 1 tsp vanilla extract

  • 1/2 tsp pumpkin pie spice (make your own here!)

Optional Add-ins:

  • 2 tbsp date syrup

  • 1 scoop salted caramel protein

  • 1/2 cup (mini) dark chocolate chips

Directions:

  1. In a food processor, add all of the ingredients, except for the chocolate chips.

  2. Blend until smooth, then pulse or fold in the chocolate chips (if using).

  3. Let chill in the fridge for at least 20 minutes, or enjoy right away! Store leftovers, if any in an airtight container in the fridge for up to about 3 weeks.
