Avocado Chocolate Mousse

It’s almost too hard to believe just 5 ingredients —2 being subtle produce items— can come together to create a ready-to-eat, rich dessert! With zero added sugars, this can double as a filling start to your day, and a reason to have chocolate for breakfast. The texture is both smooth and thick (a.k.a. so dreamy). Spread this on crisp toast, pretend it’s the yogurt in a parfait and top with layers of organic berries, granola, etc., or just grab a shiny spoon, and enjoy!

Ingredients:

  • 1 ripe avocado

  • 1/2 zucchini, sliced

  • 1 cup almond/cashew butter

  • 1/2 cup cacao powder

  • 1-3 tbsp date syrup

Directions:

  1. Slice the avocado in half and discard the pit and skin. Cut the zucchini half into circular slices to help everything blend much more swiftly.

  2. In a blender or food processor, add all five ingredients. Blend until smooth and thick— about 1.5 minutes. If need be, do this in 30-second increments, and push ingredients stuck to the sides of the blender/food processor down the sides with a spatula.

  3. Immediately grab a spoon, or store in the fridge for 20+ minutes to chill first, and enjoy! I also love using this mousse in “parfaits” with organic berries, dark chocolate chips— you name it!

  4. Store leftovers, if any, in the fridge in an airtight, glass jar.
