Chai Chocolate Chunk Cookies

Cozy up with these dreamy cookies! They’re especially perfect for fall and winter and complete with (homemade) chai spice that brings the cozy flavor up a few notches. With each soft and warm bite, there’s melted, rich chocolate that pairs so well with it all!

Ingredients:

  • 2 (pasture-raised) eggs

  • 1/2 cup almond butter

  • 1/3 cup coconut sugar

  • 1/4 cup coconut oil, melted + cooled

  • 2 cups almond flour

  • 1/2 tbsp chai spice (make your own here!)

  • 1/2 tsp baking soda

  • 1/2 tsp pink salt

  • 1/2-2/3 cup chocolate chunks

Directions:

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.

  2. In a medium-sized bowl, whisk the eggs, then stir in the almond butter, coconut sugar, and melted + cooled coconut oil.

  3. Gradually mix in the almond flour, chai spice, baking soda, and pink salt until everything is well-incorporated.

  4. Fold in the chocolate chunks.

  5. Roll the batter into balls and slightly press them down on the prepared pan because they will not spread very much on their own. Feel free to add chocolate to the top of the cookies!

  6. Let them bake for about 14 minutes and cool for at least 5 minutes. Add some flakey sea salt if you’d like — it’s a game changer!

  7. Store leftovers, if any, in an airtight container for up to about one week.
