Chocolate Chip Chickpea Cookie Dough Bites

These sweet treats equate to the classic cookie dough many of us grew up on! What sets them apart is the sneaky chickpeas blended within each bite, loaded with beloved b-vitamins and fiber. They’re an ultra-easy, no bake snack with crunches of cute chocolate chips throughout. Serve as a family-friendly treat, way to celebrate YOU, late-night movie snack, or one to get you through a long, busy day — all I know is they never last long!

Ingredients:

  • 2 cups chickpeas, drained

  • 3/4 cup almond/cashew butter

  • 1/2 cup maple syrup

  • 1/4 cup (ground) flax seeds (optional)

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • 3/4 cup (mini) chocolate chips, divided (see directions)

  • 1/2 tsp coconut butter/oil

  • flakey sea salt, for sprinkling on top

Directions:

  1. In a blender or food processor, blend everything except for the chocolate and coconut butter/oil, until everything is well-incorporated.

  2. Lightly pulse in 1/4 cup of the chocolate chips so they do not smooth out, but instead get mixed into the batter well.

  3. Dampen your hands, to minimize sticking, and roll the batter into balls, sized however you chose. Place these on a freezer-safe dish or pan, lined with parchment paper, as you go.

  4. Transfer the balls to the freezer for 20-25 minutes, until they have fully hardened.

  5. Meanwhile, mix the remaining 1/2 cup of chocolate and 1/2 tsp of coconut butter/oil together in a microwave-safe dish. Melt these in 30-second increments, stirring between each interval.

  6. Once ready, remove the balls from the freezer, and feel free to use a spoon or two to submerge them in a melted chocolate bath, or simply drizzle them in the silky-smooth chocolate.

  7. Store these in the freezer for just five minutes, then sprinkle on some flakey sea salt.

  8. Enjoy!

  9. Store leftovers, if any, in an airtight container in the freezer for up to two weeks.
