Epic Grilled Peaches

Introducing the most simple snack anyone will love year round! It’s here to satisfy one’s sweet tooth as soon as possible, but with a naturally-sweetened, juicy bite. Feel free to make this over the stove or grill, and with as many toppings as your soul is craving. This can range from luscious, melted chocolate drizzles with flakey sea salt or just a few dashes of cinnamon and a scoop of cool, coconut whip cream. Enjoy each cozy, delicious taste, and they’ll be gone before you know it!

Ingredients:

  • 5-6 peaches

  • 2 tbsp + 1/2 tsp coconut oil

  • 1/4 cup dark chocolate

  • 1 tsp flakey sea salt

Other, Optional Toppings:

  • 1-2 tbsp coconut whip cream or ice cream per peach half

  • 1-2 tbsp ground flax/hemp seeds

  • 1/2 tsp cinnamon

Directions:

  1. Slice the peaches in half, then remove the pits.

  2. Place a skillet, panini press, or grill over low-medium heat. Lightly grease each flat side of the peach halves with coconut oil, using up to 2 tbsp of it. Transfer the peaches to the warm surface as you go, keeping the flat side down.

  3. Allow each peach to remain flat for 2-3 minutes, or until grill lines and light charring appears. Now, use the tongs to transfer them, flat side up, to a freezer-safe pan lined with parchment paper.

  4. In a microwave-safe dish, melt the chocolate and remaining, 1/2 tsp of coconut oil together in thirty-second increments. Be sure to stir well between each so the chocolate does not burn!

  5. Once melted, drizzle this dreamy mixture over the peaches, then add the flakey sea salt.

  6. Transfer to the freezer for at least 5 minutes, then add any other toppings you'd like (no rules!).

  7. Enjoy!

  8. Store leftovers, if any, in an airtight container for up to one week.
