Pumpkin Chip Banana Muffins
Inspired by my Pumpkin Banana Bread, these muffins are a pillowy dream! They make for a perfect night cap (with a steamy mug of tea, oh my gosh!) and sweet treat to pair with a savory breakfast plate. With less than ten ingredients, these come together in one bowl and bring the cozy flavors of fall to your home!
Ingredients:
3 eggs
2 ripe bananas
1-2 tbsp raw honey
3/4 cup almond flour
1/2 cup oats
1 tsp sea salt
1/2 tsp baking soda
1 cup dark chocolate chunks
Directions:
Preheat the oven to 375°F. Line a muffin tin with papers or spray with oil and set this aside.
In a medium-sized bowl, whisk the eggs then add the bananas and mash them with a fork.
Stir in the honey, flour, oats, sea salt and baking soda. Fold in the chocolate chips.
Transfer the batter to your prepared muffin tin, leaving each one about ¾ of the way full. Bake for 30-34 minutes, or until you can insert a fork or toothpick in the center of a muffin and the fork comes out clean.
Let the muffins cool for about 10 minutes then enjoy!
