Baked Pumpkin Protein Oats

Baked oatmeal is such an underrated breakfast! Full of protein and fiber, this fall-inspired recipe has everything needed to start the day with ease. This is as simple as can be with ingredients free of gluten, dairy, and added sugars. I love topping this off with coconut yogurt and you can also enjoy it plain, or with drizzles of nut butter and honey!

Ingredients:

  • 2 cups oats

  • 1 cup pumpkin purée

  • 1/2 cup milk, unsweetened

  • 2-3 scoops vanilla protein powder

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • 1/2 tsp sea salt

Directions:

  1. Preheat the oven to 350°F.

  2. Mix all of the ingredients together in a bowl.

  3. Transfer to an oven-safe baking dish. Bake for about 25 minutes or until you can insert a knife into the center and it comes out clean.

  4. Enjoy warm or let cool in the fridge to serve chilled!
