Salted Peanut Butter Fudge
Stop what you’re doing and get on this freezer fudge. There’s only five ingredients, no need for an oven, so no excuses. That may have been a tad aggressive, although, I can attest that this dreamy treat deserves a spot in your freezer. It’s silky-smooth, has minimal sugars, and is designed for fellow peanut butter lovers. If you’re feeling adventurous and extra salty, take this up a crunchy notch by adding (gluten-free) pretzel twists on top of each square. Next time I make a batch, I’ll be doing the same. Although, this fudge is phenomenal all on its own!
Ingredients:
3/4 cup creamy peanut butter
1/4 cup coconut oil, melted
3 tbsp date syrup*
1 tsp vanilla extract
flakey sea salt, as desired
Directions:
Line a small dish with parchment paper. Pro tip: use chip clips or clothespins on opposite sides so it stays in place while you pour the batter in, later on.
Stir together the peanut butter, coconut oil, date syrup, and vanilla until smooth.
Transfer the mixture to the dish lined with parchment paper, then sprinkle with flakey sea salt.
Store in the freezer for about 45 minutes, or until the fudge has fully chilled. Enjoy immediately and keep leftovers, if any, in the freezer.
Notes:
You can substitute maple syrup or even honey here.
