Fresh Salsa

This family-friendly, simple salsa is the perfect topping for any meal. It brings any taco and bowl to life! Bonus: use farmer’s market tomatoes, to add an extra boost of fresh flavor. This juicy dip tastes amazing with your favorite, crunchy crackers or soft-shell tacos. Grab a few produce items, spices, and a bowl, then enjoy this in minutes!

Ingredients:

  • 3 tomatoes, medium

  • 1/3 cup sweet vidalia onion

  • 1/4 red onion

  • 1/4 cup scallions

  • 1/4 cup goat cheese crumbles (optional)

  • 2 tbsp cilantro

  • juice of one lime, freshly squeezed

  • 1 tbsp of each: black pepper, freshly ground and oregano (optional)

  • 2 tsp garlic, minced

  • 1 tsp of each: cumin (optional) and pink salt

Directions:

  1. Dice the tomatoes and onions, then transfer them to a medium-large bowl.

  2. Add all the spices, including the cilantro, black pepper, oregano, cumin, and salt.

  3. Squeeze the lime juice in, and stir everything well.

  4. Fold the goat cheese in.

  5. Grab a chip or taco and serve!

  6. Store leftovers in the fridge for up to about one week.

Notes:

  • I used two one vine-ripe tomato and two heirloom tomatoes.

  • Slice tomatoes and onions bigger, for a more pico de gallo consistency.

  • Used half of a medium sweet vidalia onion and roughly 1/3 of a medium red onion.
