Smooth Nut/Seed Butter

There are very few things I eat plain, and nut butter is a big check in that box. Although, it’s no surprise to find it smeared or drizzles on crispy waffles, pancakes, toasts, or mixed in creamy yogurt and smoothies. The options are limitless! Such a fun, simplistic way to pack extra fiber, protein, magnesium, and omega-3 fats into our busy days. Oh, did I mention you only need one ingredient?!

Ingredient(s):

  • 4 cups any nuts/seeds

Optional Add-ins:

  • 1 tsp cinnamon

  • 1/8 tsp sea salt

Directions:

  1. Preheat the oven to 325 degrees.

  2. Place your nut/seed mix on a pan, then bake for 10-12 minutes.

  3. Allow them to cool completely, for 5-10 minutes.

  4. Transfer to a medium-large food processor, and puree until smooth. May need to scrape the sides down, and pulse a few times.

  5. Pulse any add-ins into the creamy mixture, if desired.

  6. Enjoy!

  7. Store leftovers, if any, in an airtight container in the fridge. Bonus points for a cute jar!

Notes:

  • Haven’t tried using a blender, instead of a food processor, but it should work.

  • Feel free to get creative, and throw in a combination of nuts/seeds!
