Stuffed Dates

These make for an ideal, go-to snack, when you want something quick. All you need are a few staple ingredients. Extra toppings are not merely welcomed, they’re encouraged too! Dates have a low glycemic index, meaning they don’t spike your blood sugar, which we love. My favorite way to stuff these chewy, nutritious treats is with a heaping spoonful of nut butter, drizzles of melted chocolate, and crunchy cacao nibs. That may sound like a mouthful, quite literally, but trust me on this! Take 10 minutes to make these, and enjoy the caramel and chocolate combination, melting in your mouth!

Ingredients:

  • medjool dates, pitted

Optional Add-ins:

  • nut/seed butter of choice

  • cacao nibs

  • pecans/walnuts, chopped

  • chocolate, melted

  • flakey sea salt, for topping

Directions:

  1. Using a knife, make a small slit in each date, then remove and discard the singular pit.

  2. Pull the dates’ edges, to create a wider gap, for stuffing.

  3. Add scoops of your favorite nut or seed butter, then sprinkle cacao nibs and nuts on top, if using.

  4. In a microwave-safe bowl, melt chocolate in 30-second increments, stirring between each, until fully melted.

  5. Use the chocolate to drizzle and dunk the stuffed dates as much as your heart desires.

  6. Sprinkle with sea salt, if desired.

  7. Place in the freezer for about 5 minutes, or until hardened.

  8. Enjoy anytime you need a filling snack, quick breakfast, and energy booster!
